This is a great, light meal. Recommend serving with toasted nut bread and fresh fruit.
3 Eggs, lightly beaten
1 pound Cottage Cheese
10 oz. Package Frozen Spinach (thawed and drained)
8 oz. Cheddar Cheese, shredded
1/4 cup Butter, Melted
3 Tablespoons Flour
Salt blend to taste
Combine all ingredients. Pour into a 9"pie plate. Bake at 325 degrees for one hour. Cool slightly and cut into wedges.
